Right-click a crafting recipe in a business to choose storage, storefront or a target-stock policy. The September 24 explanation describes sending production above the retained target to the storefront.

What to check in your save

Reserve ingredients needed by downstream recipes before sending surplus to visitors. A stock target controls routing; it is not a guaranteed number of customer purchases.
